More specifically, the latent heat is the difference in
energy between the molecule as a gas and if it is liquid.

Unfortunately, the average person doesn't understand Joules,
they might understand BTU per pound, or calories per gram.

It definitely affects surface temperatures _GREATLY_,
as a cooling effect, when liquid water on the surface evaporates.

There are other complex processes where water itself
cools by evaporation and in OTHER ways that may or may not
involve the latent heats of vaporization or fusion.
